- You can whip it or leave it as it is. However, when whipped is an absolute delight, so I always take the time for this step. You can prepare a larger batch using an entire 1 lb (450 g) container, and it will stay fresh in the fridge for up to 7 days.
- For each slice of toast, you'll need 1 ยฝ to 2 tablespoons of cottage cheese.
- Bread: Use sturdy, good-quality bread capable of holding up well under the topping. The best bread is sourdough because of its texture and ability to toast nicely without becoming soggy. It also adds a delightful crunch to your dish.
- Other bread options: Whole grain, multigrain, or rye. Using packaged, soft, white bread for making these cottage cheese toasts is not recommended.
Ingredients for cottage cheese avocado toast:
- Avocado, olive oil, lemon juice, parsley, fine sea salt, ground black pepper, and something for the topping.
- Topping: I sprinkled a bit of store-bought hummus topping on top of the cottage cheese avocado toast, which contains sesame and nigella seeds, some coriander, cumin, dried herbs, and mild red pepper flakes.
- However, you can use other favorite toppings, for instance, Everything bagel or just a few nigella or roasted sesame or sunflower seeds.
Ingredients for the tomato balsamic toasts:
- Ripe, sweet, fresh tomatoes of any kind (I had a mix of plum and tiny tomatoes from my garden), balsamic vinegar, salt, pepper, and topping mix. I definitely would have topped these toasts with fresh basil, but I didnโt have any at the moment.
- You can add some very finely chopped red onion or green onions to each kind of toast.
How to make cottage cheese toasts with avocado and tomatoes?
- Blend the cottage cheese if desired (I strongly recommend it). Add salt and pepper to taste (1).
- Toast the slices of bread in a toaster (1).
- Spread about 1 ยฝ to 2 tablespoons of the cheesy spread on each slice of bread.
- Mash the avocado using a fork (2), transfer it to a bowl, and mix it with lemon juice, olive oil, and some salt and pepper to taste. You can also slice and drizzle the avocado with lemon juice and oil (3).
- To make just avocado toast without tomatoes, top the bread with the avocado mixture and sprinkle it with chopped fresh parsley, a little flaky salt and black pepper, and the topping mixture (4).
- Avocado and tomato toasts: Slice the tomatoes if large and halve them if small. Arrange them on the bread slices.
- Drizzle them with balsamic vinegar, sprinkle them with a little flaky sea salt and pepper, and garnish them with fresh basil leaves and the seed topping. An extra drizzle of olive oil is excellent if you're not counting the calories (4).
