    • Versatile: You can customize them with your favorite toppings, whether you're in the mood for something savory like avocado and tomato, salmon, cucumbers, or something sweet like jam, peanut butter, jelly, or honey and banana.
    • Nutritious: The cheese is a good source of protein and calcium, making these toasts a high-protein meal that can help keep you satisfied.
    • Satisfying: Combining textures and flavors โ€“ crispy toast, creamy cottage cheese, and your chosen toppings โ€“ ensures a tasty and fulfilling snack or meal.

    • Cottage Cheese: There are many brands of cottage cheese; use your favorite. You can choose small-curd or large-curd cottage cheese, full-fat, low-fat, or even fat-free options. However, the full-fat variety tends to deliver the best flavor.
      • You can whip it or leave it as it is. However, when whipped is an absolute delight, so I always take the time for this step. You can prepare a larger batch using an entire 1 lb (450 g) container, and it will stay fresh in the fridge for up to 7 days.
      • For each slice of toast, you'll need 1 ยฝ to 2 tablespoons of cottage cheese. 
    • Bread: Use sturdy, good-quality bread capable of holding up well under the topping. The best bread is sourdough because of its texture and ability to toast nicely without becoming soggy. It also adds a delightful crunch to your dish.
      • Other bread options: Whole grain, multigrain, or rye. Using packaged, soft, white bread for making these cottage cheese toasts is not recommended.

    Ingredients for cottage cheese avocado toast:

    • Avocado, olive oil, lemon juice, parsley, fine sea salt, ground black pepper, and something for the topping.
    • Topping: I sprinkled a bit of store-bought hummus topping on top of the cottage cheese avocado toast, which contains sesame and nigella seeds, some coriander, cumin, dried herbs, and mild red pepper flakes.
      • However, you can use other favorite toppings, for instance, Everything bagel or just a few nigella or roasted sesame or sunflower seeds. 

    Ingredients for the tomato balsamic toasts:

    • Ripe, sweet, fresh tomatoes of any kind (I had a mix of plum and tiny tomatoes from my garden), balsamic vinegar, salt, pepper, and topping mix. I definitely would have topped these toasts with fresh basil, but I didnโ€™t have any at the moment. 
    • You can add some very finely chopped red onion or green onions to each kind of toast.

    How to make cottage cheese toasts with avocado and tomatoes?

    • Blend the cottage cheese if desired (I strongly recommend it). Add salt and pepper to taste (1).
    • Toast the slices of bread in a toaster (1).
    • Spread about 1 ยฝ to 2 tablespoons of the cheesy spread on each slice of bread. 
    • Mash the avocado using a fork (2), transfer it to a bowl, and mix it with lemon juice, olive oil, and some salt and pepper to taste. You can also slice and drizzle the avocado with lemon juice and oil (3).
    • To make just avocado toast without tomatoes, top the bread with the avocado mixture and sprinkle it with chopped fresh parsley, a little flaky salt and black pepper, and the topping mixture (4).
    • Avocado and tomato toasts: Slice the tomatoes if large and halve them if small. Arrange them on the bread slices. 
      • Drizzle them with balsamic vinegar, sprinkle them with a little flaky sea salt and pepper, and garnish them with fresh basil leaves and the seed topping. An extra drizzle of olive oil is excellent if you're not counting the calories (4).

    More cottage cheese toast ideas

    • โ€‹Herbs: Add your favorite fresh herbs to the cheese.
    • Cucumber: Top the toast with cucumber slices and fresh dill. 
    • Salmon: Mix the cheese with a bit of prepared horseradish and top the toast with smoked salmon slices and dill. 
    • Other savory toppings: Hard-boiled or fried eggs, thin slices of salami or ham, chopped olives, flaked tuna (in oil, well-drained), leftover roasted chicken or turkey, leftover thinly sliced steak, pan-fried shrimp, etc.
    • Sweet toppings: Jam, jelly, or banana and honey (you can add a bit of peanut butter to both kinds of toast if desired), apple slices and a sprinkle of cinnamon, fresh strawberries, other fresh fruit or berries, or roasted nuts with a drizzle of honey or maple syrup.

    Expert Tips

    • Whip the cottage cheese to make it creamier and more spreadable. I use a food processor for the smoothest results, but you can use a hand mixer or crush and stir vigorously with a fork.
    • Bread: Choose sturdy bread like sourdough or whole-grain that can handle the weight of the topping without becoming soggy.
    • Avocado: Make sure it is perfectly ripe before you cut it, and donโ€™t forget to mix it with a bit of lemon juice (or lime juice) to prevent it from browning. Slice or mash it, depending on your preference. Some like avocado slices, while others prefer a creamy mashed texture.
    • Prepare the toasts shortly before serving. Although they will keep in the fridge for at least half a day, they are still at their best when served immediately. Avocado tends to turn brown, and the juice of the tomatoes will eventually make the bread soggy.

    Ingredients  

    Cottage cheese (Note 1):

    • 4 slices sourdough bread Note 2
    • 4-6 tablespoons cottage cheese
    • fine sea salt and ground black pepper

    Avocado toasts (Note 3):

    • 1 avocado ripe
    • 1 teaspoon olive oil
    • 1 teaspoon lemon juice
    • 1-2 sprigs parsley finely chopped
    • ยฝ teaspoon seed topping Note 4
    • flaky salt and ground black pepper

    Add for tomato toasts:

    • 2 plum tomatoes or a mix of your favorite small tomatoes
    • ยฝ - 1 teaspoon balsamic vinegar
    • ยฝ teaspoon seed topping
    • flaky salt and ground black pepper
    • a few basil leaves

    Instructions

    Cottage cheese and bread:

    • Whip the cottage cheese in a food processor until smooth. You can also leave the cottage cheese as it is or mash it with a fork. Add salt and pepper to taste.
      1 lb/ 450 g cottage cheese โ€“ makes a large batch but keeps well in the refrigerator
    • Toast the slices of bread in a toaster. Spread about ยฝ - 1 tablespoon cheese on each piece.
      4 slices of bread - 4-6 tablespoon cottage cheese

    Avocado toasts:

    • Mash the avocado with a fork on a cutting board (or directly in the bowl). Transfer it to a bowl, and mix it with lemon juice, olive oil, and some salt and pepper to taste. You can also slice and drizzle the avocado with lemon juice and oil.
      1 avocado + 1 teaspoon lemon juice + 1 teaspoon olive oil + salt and pepper
    • Spread the mixture on top of the cottage cheese toast. Sprinkle it with chopped fresh parsley, a little flaky salt and black pepper, and the topping mixture.
      1-2 sprigs parsley + ยฝ teaspoon topping mixture or seeds of your choice + flaky salt + black pepper
    • You can serve the avocado toasts now or add tomatoes, balsamic, and basil if desired.

    Avocado-tomato toasts:

    • Slice the tomatoes if large and halve them if small. Arrange them on the cottage cheese and avocado toasts.
      2 plum tomatoes or several small tomatoes of your choice
    • Drizzle them with balsamic vinegar, sprinkle them with a little flaky sea salt and pepper, and garnish them with fresh basil leaves and seeds.
      ยฝ - 1 teaspoon balsamic vinegar + flaky salt + black pepper + basil leaves + ยฝ teaspoon seed topping

    Notes

    1. Cottage cheese: I prefer full-fat, but low-fat is also ok. I recommend blending the cheese, but you can also leave it as it is. Leftover whipped cheese keeps very well in the fridge in an airtight container for up to one week.
    2. Bread: Use a sturdy bread capable of holding the topping without becoming soggy too fast.
    3. Toasts: You can make just avocado toasts or avocado-tomato toasts.
    4. Topping: I used a store-bought hummus topping, which contains sesame and nigella seeds, some coriander, cumin, and dried herbs. However, you can use other toppings like Everything bagel seasoning or just a few nigella or roasted sesame or sunflower seeds.
