This quiche with cottage cheese is simple and fast to prepare - you won't even notice the crust is missing! Cottage cheese gives it a creamy texture and boosts the protein, making it a great low-carb, high-protein meal.

Cottage cheese: You can use low-fat or full-fat; I use 4% most of the time, but 2% is also fine. You can also make Cottage Cheese Toast, too, or learn How to Blend Cottage Cheese.
Vegetables: Green onions, peas, and bell peppers.
Large eggs
Cheese: Preferably freshly grated cheese, as it melts better and has more flavor. I use Cheddar or Gouda cheese most of the time. You can also use Parmesan cheese, Swiss cheese, crumbled feta, or another flavorful, good-melting cheese. I donโt recommend mozzarella; I find it lacks flavor.

Variations
This crustless cottage cheese quiche recipe is an incredibly versatile dish.
- Other vegetables: You can use veggies that cook quickly, such as zucchini, tomatoes (seeds removed), mushrooms, fresh spinach, canned corn, etc.
- Use fresh herbs instead of dried: Parsley, dill, thyme, oregano, basil, marjoram, chives, etc. I often use fresh herbs in summer; they make the quiche even better.
- Cooked sausage or leftover chicken, turkey, or other leftover meats you might have.
- Leftover ham, cooked bacon, salami, or other deli meats โ all chopped into small pieces.
- Cooked shrimp or canned tuna.
How to make cottage cheese quiche?
Step #1: In a large mixing bowl, mix cottage cheese, eggs, grated cheese, dried herbs, salt, and black pepper.
Step #2: Add diced peppers, finely chopped green onions, and peas to the egg mixture.
Step #3: Grease the dish with cooking spray or olive oil and pour the mixture into it.
Step #4: Bake quiche for about 35 minutes until set and golden.
Tip
You will need a large casserole dish or pie dish to bake the quiche in 35 minutes. I use a ceramic quiche dish with a diameter of 12 inches (30 cm). If your baking dish is smaller, you must increase the baking time. Check that the mixture is set in the middle.
Make ahead
- Mix all the ingredients several hours in advance, cover the bowl, and refrigerate the mixture until ready to bake.
- You can also bake the quiche and serve it cold, which makes it a good lunch box or picnic option.

How to store and reheat leftovers?
Refrigerate leftovers in an airtight container for 3-4 days.
I donโt recommend freezing the cottage cheese quiche; I tried it and didnโt like its texture once thawed.
Reheat leftovers in the preheated oven for 10-15 minutes or until hot. You can also reheat the slices in the microwave.
