Cottage Cheese Toast (with Avocado and Tomatoes)

Make our cottage cheese toasts with creamy avocado or tangy tomatoes and balsamic; they are perfect for breakfast or a quick snack.

Ingredients

Cottage cheese (Note 1):

  • 4 slices sourdough bread Note 2
  • 4-6 tablespoons cottage cheese
  • fine sea salt and ground black pepper

Avocado toasts (Note 3):

  • 1 avocado ripe
  • 1 teaspoon olive oil
  • 1 teaspoon lemon juice
  • 1-2 sprigs parsley finely chopped
  • ½ teaspoon seed topping Note 4
  • flaky salt and ground black pepper

Add for tomato toasts:

  • 2 plum tomatoes or a mix of your favorite small tomatoes
  • ½ - 1 teaspoon balsamic vinegar
  • ½ teaspoon seed topping
  • flaky salt and ground black pepper
  • a few basil leaves

Instructions

Cottage cheese and bread:

  • Whip the cottage cheese in a food processor until smooth. You can also leave the cottage cheese as it is or mash it with a fork. Add salt and pepper to taste.
    1 lb/ 450 g cottage cheese – makes a large batch but keeps well in the refrigerator
  • Toast the slices of bread in a toaster. Spread about ½ - 1 tablespoon cheese on each piece.
    4 slices of bread - 4-6 tablespoon cottage cheese

Avocado toasts:

  • Mash the avocado with a fork on a cutting board (or directly in the bowl). Transfer it to a bowl, and mix it with lemon juice, olive oil, and some salt and pepper to taste. You can also slice and drizzle the avocado with lemon juice and oil.
    1 avocado + 1 teaspoon lemon juice + 1 teaspoon olive oil + salt and pepper
  • Spread the mixture on top of the cottage cheese toast. Sprinkle it with chopped fresh parsley, a little flaky salt and black pepper, and the topping mixture.
    1-2 sprigs parsley + ½ teaspoon topping mixture or seeds of your choice + flaky salt + black pepper
  • You can serve the avocado toasts now or add tomatoes, balsamic, and basil if desired.

Avocado-tomato toasts:

  • Slice the tomatoes if large and halve them if small. Arrange them on the cottage cheese and avocado toasts.
    2 plum tomatoes or several small tomatoes of your choice
  • Drizzle them with balsamic vinegar, sprinkle them with a little flaky sea salt and pepper, and garnish them with fresh basil leaves and seeds.
    ½ - 1 teaspoon balsamic vinegar + flaky salt + black pepper + basil leaves + ½ teaspoon seed topping

Notes

  1. Cottage cheese: I prefer full-fat, but low-fat is also ok. I recommend blending the cheese, but you can also leave it as it is. Leftover whipped cheese keeps very well in the fridge in an airtight container for up to one week.
  2. Bread: Use a sturdy bread capable of holding the topping without becoming soggy too fast.
  3. Toasts: You can make just avocado toasts or avocado-tomato toasts.
  4. Topping: I used a store-bought hummus topping, which contains sesame and nigella seeds, some coriander, cumin, and dried herbs. However, you can use other toppings like Everything bagel seasoning or just a few nigella or roasted sesame or sunflower seeds.
