Cottage Cheese: You can choose small-curd or large-curd cottage cheese, full-fat, low-fat, or even fat-free options. I prefer the full-fat version. For each slice of toast, you'll need 1 ยฝ to 2 tablespoons of cottage cheese.ย
- You can whip it or leave it as it is. You can prepare a larger batch using an entire 1 lb (450 g) container, and it will stay fresh in the fridge for up to 7 days.
Bread: Use sturdy, good-quality bread capable of holding up well under the topping. You can also use whole grain, multigrain, or rye. Using packaged, soft, white bread for making these cottage cheese toasts is not recommended.
Ingredients for cottage cheese avocado toast: Avocado, olive oil, lemon juice, parsley, fine sea salt, ground black pepper, and something for the topping. Make the Avocado and Tomato Toast next.
For the topping, I sprinkled a store-bought hummus mix with sesame, nigella seeds, coriander, cumin, dried herbs, and mild red pepper flakes. You can also use an Everything Bagel seasoning or just a few sesame, nigella, or sunflower seeds.
Ingredients for tomato balsamic toast: Ripe, sweet tomatoes (any kind), balsamic vinegar, salt, pepper, and topping mix. Optional: finely chopped red or green onions.

How to make cottage cheese toasts with avocado and tomatoes?
Step #1: Blend the cottage cheese if desired (I strongly recommend it). Add salt and pepper to taste. Toast the slices of bread in a toaster. Spread on each slice of bread.ย
Step #2: Mash the avocado using a fork. You can also slice and drizzle the avocado with lemon juice and oil.
Step #3: Transfer the mash to a bowl, and mix it with lemon juice, olive oil, and some salt and pepper to taste.
Step #4: To make just avocado toast without tomatoes, top the bread with the avocado mixture and sprinkle it with chopped fresh parsley, a little flaky salt, and black pepper, and the topping mixture.
- To make avocado and tomato toasts: Slice the tomatoes if large and halve them if small. Arrange them on the bread slices.ย
- Drizzle them with balsamic vinegar, sprinkle them with a little flaky sea salt and pepper, and garnish them with fresh basil leaves and the seed topping. An extra drizzle of olive oil is excellent if you're not counting the calories.
More cottage cheese toast ideas
- Herbs: Add your favorite fresh herbs to the cheese.
- Cucumber: Top the toast with cucumber slices and fresh dill.
- Salmon: Mix the cheese with a bit of prepared horseradish and top the toast with smoked salmon slices and dill.
- Other savory toppings: Hard-boiled or fried eggs, thin slices of salami or ham, chopped olives, flaked tuna (in oil, well-drained), leftover roasted chicken or turkey, leftover thinly sliced steak, pan-fried shrimp, etc.
- Sweet toppings: Jam, jelly, or banana and honey (you can add a bit of peanut butter to both kinds of toast if desired), apple slices and a sprinkle of cinnamon, fresh strawberries, other fresh fruit or berries, or roasted nuts with a drizzle of honey or maple syrup.

Tips
Whip the cottage cheese to make it creamier and more spreadable. I use a food processor for the smoothest results, but you can use a hand mixer or crush and stir vigorously with a fork.
Prepare the toasts shortly before serving. Although they will keep in the fridge for at least half a day, they are still at their best when served immediately. Avocado tends to turn brown, and the juice of the tomatoes will eventually make the bread soggy.
How to store?
If you're making a larger batch of blended cottage cheese, store it in an airtight container in the fridge for up to a week.
It's preferable to prepare these cottage cheese toasts with avocado and tomatoes just before serving and avoid leftovers. However, you can refrigerate any leftovers for a few hours.

- 4 slices sourdough bread Note 2
- 4-6 tablespoons cottage cheese
- fine sea salt and ground black pepper
Avocado toasts (Note 3):
- 1 avocado ripe
- 1 teaspoon olive oil
- 1 teaspoon lemon juice
- 1-2 sprigs parsley finely chopped
- ยฝ teaspoon seed topping Note 4
- flaky salt and ground black pepper
Add for tomato toasts:
- 2 plum tomatoes or a mix of your favorite small tomatoes
- ยฝ - 1 teaspoon balsamic vinegar
- ยฝ teaspoon seed topping
- flaky salt and ground black pepper
- a few basil leaves
Instructions
Cottage cheese and bread:
- Whip the cottage cheese in a food processor until smooth. You can also leave the cottage cheese as it is or mash it with a fork. Add salt and pepper to taste. 4-6 tablespoons cottage cheese + fine sea salt and ground black pepper

You can also slice and drizzle the avocado with lemon juice and oil. 1 avocado + 1 teaspoon olive oil + 1 teaspoon lemon juice + flaky salt and ground black pepper
- Spread the mixture on top of the cottage cheese toast. Sprinkle it with chopped fresh parsley, a little flaky salt, and black pepper, and the topping mixture. 1-2 sprigs parsley + ยฝ teaspoon seed topping + flaky salt and ground black pepper
- You can serve the avocado toasts now or add tomatoes, balsamic, and basil if desired.

Notes
- Cottage cheese: I prefer full-fat, but low-fat is also ok. I recommend blending the cheese, but you can also leave it as it is. Leftover whipped cheese keeps very well in the fridge in an airtight container for up to one week.
- Bread: Use a sturdy bread capable of holding the topping without becoming soggy too fast.
- Toasts: You can make just avocado toasts or avocado-tomato toasts.
