This one-dish drumstick recipe is made with only two main ingredients โ chicken drumsticks and potatoes. All you have to do is season the chicken and the potatoes, cut some onions, and place the chicken legs on top of everything.
The result? Incredibly delicious roasted drumsticks and potatoes, all baked together in one dish. As the drumsticks cook, their drippings soak into the potatoes, making them extra flavorful.

- You can also make this recipe with thighs, a combination of drumsticks and thighs, or whole chicken quarters. If using quarters, add an extra 5 to 10 minutes to the roasting time and check that the chicken is fully cooked. If itโs not, give it 5 more minutes and check again.

How to make one dish chicken drumsticks?
Step #1: Pat the chicken pieces dry with paper towels. Rub them with oil and then with the mixed spices.
Step #2: Cut the peeled or unpeeled potatoes and the peeled onions into wedges. Rub them with oil and the mixed spices.
Step #3: Place the vegetables in a roasting pan and place the drumsticks on top.
Step #4: Roast the drumsticks and potatoes in the preheated oven for 40-45 minutes or until the potatoes are soft and the chicken is cooked through.
Tips
Servings: Four chicken drumsticks and one pound of potatoes serve two people; if you want to make four servings of this one dish chicken drumstick recipe, use eight legs and two pounds of potatoes and bake everything on a baking sheet instead of in a roasting tin.
Don't wash chicken before cooking; it only spreads bacteria to your sink and kitchen surfaces. Washing won't remove bacteria - only heat will. Simply cook the chicken until it reaches an internal temperature of 165ยฐF (74ยฐC) to ensure it's safe to eat.
Recipe shortcut: For an even quicker version, use store-bought chicken seasoning and potato seasoning instead of the spices I used. You can use pre-made blends like Italian seasoning, barbecue rub, or Cajun seasoning for the chicken. For the potatoes, try garlic powder, paprika, or a seasoned salt mix.
Recipe FAQs
No, the leg refers to the whole leg, including the drumstick and the thigh. However, many people call the drumstick a leg, which can be a bit confusing.
You can use thighs or bone-in chicken quarters. Boneless thighs or breasts cook faster and may dry out before the vegetables are done. If using boneless cuts, give the potatoes and onions a 15-20 minute head start, then add the chicken and cook everything until the potatoes are soft and the chicken reaches a safe internal temperature. Make ahead, store and reheat
You can season the meat for the one dish chicken drumstick recipe several hours in advance or even the night before. Let them marinate in an airtight container in the fridge.
However, it's best to cut and season the potatoes just before cooking or no more than 30โ60 minutes ahead. Chopping them too early exposes them to air, causing oxidation, which turns them brown and affects their texture, making them less crispy when roasted.
Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm them in the oven at 350ยฐF (175ยฐC) until heated through, or use a microwave.
Freeze: You can freeze leftover meat, but I donโt recommend freezing potatoes; they are not good once thawed.

For the chicken:
- 4 chicken drumsticks Note 2
- 1 tablespoon olive oil
- ยฝ tablespoon ground cumin Note 3
- ยฝ tablespoon ground coriander
- ยฝ teaspoon sweet smoked paprika
- ยพ teaspoon turmeric
- 1 pinch of cayenne pepper
- ยพ teaspoon fine sea salt
- ยผ teaspoon ground black pepper
For the potatoes:
- 1 lb potatoes
- 1 large red onion
- 1 tablespoon olive oil
- 1 teaspoon sweet paprika powder
- ยฝ teaspoon thyme
- ยฝ teaspoon fine sea salt
- ยผ teaspoon ground black pepper
Instructions
- Preheat the oven to 400ยฐF (200ยฐC).
- Season chicken: Mix the chicken seasoning in a small bowl. Pat the drumsticks dry with a paper towel and place them in a large bowl. Add the oil and rub it all over the meat. Sprinkle the seasoning over the drumsticks and rub to coat them evenly. Set aside.ยฝ tablespoon ground cumin + ยฝ tablespoon ground coriander + ยฝ teaspoon sweet smoked paprika + ยพ teaspoon turmeric + 1 pinch of cayenne pepper + ยพ teaspoon fine sea salt + ยผ teaspoon ground black pepper + 4 chicken drumsticks + 1 tablespoon olive oil
- Cut potatoes: Peel, wash and dry the potatoes. You can leave the peel on, but make sure that you scrub the potatoes very well. Cut them into wedges and place them in another large bowl (Note 4).1 lb potatoes
- Cut onion: Peel it, cut it into wedges, and separate the layers a bit. Add the to the potatoes.1 large red onion
- Season vegetables: Toss the veggies with oil and spices, ensuring they are evenly coated.1 tablespoon olive oil + 1 teaspoon sweet paprika powder + ยฝ teaspoon thyme + ยฝ teaspoon fine sea salt + ยผ teaspoon ground black pepper
- Assemble the dish: Place the potatoes and the onions into the roasting pan. Arrange the drumsticks on top.
- Roast drumsticks and potatoes for 40-45 minutes until the potatoes and the onions are soft and the chicken drumsticks are cooked through. Check with an instant-read thermometer; the internal temperature should be 165ยฐF (74ยฐC).
- Rest for 5 minutes and serve.
