Season chicken: Mix the chicken seasoning in a small bowl. Pat the drumsticks dry with a paper towel and place them in a large bowl. Add the oil and rub it all over the meat. Sprinkle the seasoning over the drumsticks and rub to coat them evenly. Set aside.½ tablespoon ground cumin + ½ tablespoon ground coriander + ½ teaspoon sweet smoked paprika + ¾ teaspoon turmeric + 1 pinch of cayenne pepper + ¾ teaspoon fine sea salt + ¼ teaspoon ground black pepper + 4 chicken drumsticks + 1 tablespoon olive oil
Cut potatoes: Peel, wash and dry the potatoes. You can leave the peel on, but make sure that you scrub the potatoes very well. Cut them into wedges and place them in another large bowl (Note 4).1 lb potatoes
Cut onion: Peel it, cut it into wedges, and separate the layers a bit. Add the to the potatoes.1 large red onion
Season vegetables: Toss the veggies with oil and spices, ensuring they are evenly coated.1 tablespoon olive oil + 1 teaspoon sweet paprika powder + ½ teaspoon thyme + ½ teaspoon fine sea salt + ¼ teaspoon ground black pepper
Assemble the dish: Place the potatoes and the onions into the roasting pan. Arrange the drumsticks on top.
Roast drumsticks and potatoes for 40-45 minutes until the potatoes and the onions are soft and the chicken drumsticks are cooked through. Check with an instant-read thermometer; the internal temperature should be 165°F (74°C).
Rest for 5 minutes and serve.
Notes
Servings: This recipe serves two adults or two not-very-hungry adults and a small child. To double the recipe, use a baking sheet instead of a roasting pan for the drumsticks and potatoes.
Chicken: You can also make this recipe with thighs, a mix of drumsticks and thighs, or whole chicken quarters. If using quarters, increase the roasting time by 5 to 10 minutes and ensure the chicken is cooked through.
Seasoning: Use store-bought chicken and potato seasoning instead of the spices I used. Try Italian seasoning, barbecue rub, or Cajun seasoning for the chicken and garlic powder, curry powder, or seasoned salt for the potatoes.
Bowls: You can season the potatoes and onions directly in the roasting pan to save washing an extra bowl.
