    Quiche with Cottage Cheese

    The crustless quiche with cottage cheese is easy to make and super delicious. No stovetop cooking is required; all you must do is mix the ingredients and bake the quiche.

    This quiche with cottage cheese is simple and fast to prepare - you won't even notice the crust is missing! Cottage cheese gives it a creamy texture and boosts the protein, making it a great low-carb, high-protein meal. 

    Packed with cheese and vegetables, this quiche requires little effort; it can be made in advance or stored as leftovers for easy meal prep. You can serve it for breakfast, lunch, or dinner, and it also makes a good recipe for your lunch box or for a picnic.

    Recipe ingredients

    Cottage cheese: You can use low-fat or full-fat; I use 4% most of the time, but 2% is also fine. You can also make Cottage Cheese Toast, too, or learn How to Blend Cottage Cheese.

    Vegetables: Green onions, peas, and bell peppers. 

    Large eggs

    Cheese: Preferably freshly grated cheese, as it melts better and has more flavor. I use Cheddar or Gouda cheese most of the time. You can also use Parmesan cheese, Swiss cheese, crumbled feta, or another flavorful, good-melting cheese. I donโ€™t recommend mozzarella; I find it lacks flavor.

    Variations

    This crustless cottage cheese quiche recipe is an incredibly versatile dish. 

    • Other vegetables: You can use veggies that cook quickly, such as zucchini, tomatoes (seeds removed), mushrooms, fresh spinach, canned corn, etc. 
    • Use fresh herbs instead of dried: Parsley, dill, thyme, oregano, basil, marjoram, chives, etc. I often use fresh herbs in summer; they make the quiche even better. 
    • Cooked sausage or leftover chicken, turkey, or other leftover meats you might have.
    • Leftover ham, cooked bacon, salami, or other deli meats โ€“ all chopped into small pieces. 
    • Cooked shrimp or canned tuna.

    How to make cottage cheese quiche?

    Step #1: In a large mixing bowl, mix cottage cheese, eggs, grated cheese, dried herbs, salt, and black pepper.

    Step #2: Add diced peppers, finely chopped green onions, and peas to the egg mixture.

    Step #3: Grease the dish with cooking spray or olive oil and pour the mixture into it.

    Step #4: Bake quiche for about 35 minutes until set and golden. 

    Tip

    You will need a large casserole dish or pie dish to bake the quiche in 35 minutes. I use a ceramic quiche dish with a diameter of 12 inches (30 cm). If your baking dish is smaller, you must increase the baking time. Check that the mixture is set in the middle. 

    Make ahead

    • Mix all the ingredients several hours in advance, cover the bowl, and refrigerate the mixture until ready to bake. 
    • You can also bake the quiche and serve it cold, which makes it a good lunch box or picnic option.

    How to store and reheat leftovers?

    Refrigerate leftovers in an airtight container for 3-4 days.

    I donโ€™t recommend freezing the cottage cheese quiche; I tried it and didnโ€™t like its texture once thawed.

    Reheat leftovers in the preheated oven for 10-15 minutes or until hot. You can also reheat the slices in the microwave.

    Ingredients  

    • 14 oz cottage cheese about 1 โ…” cup/ 400 g Note 2
    • 4 large eggs
    • 1 ยฝ cups cheese grated, 100 g, Note 3
    • 1 teaspoon dried parsley Note 4
    • 1 teaspoon thyme
    • ยผ teaspoon red pepper flakes or cayenne pepper to taste
    • ยฝ teaspoon fine sea salt
    • ยผ teaspoon ground black pepper
    • โ…“ cup green onions finely sliced, about 1 oz/ 30 g, Notes 5,6
    • ยฝ red pepper finely diced
    • ยฝ cup frozen peas thawed, 2.5 oz/ 75 g

    Instructions

    • Mix cottage cheese, eggs, grated cheese, dried herbs, salt, and pepper in a large bowl.
      14 oz cottage cheese/ 400 g + 4 large eggs + 1 ยฝ cups cheese / 100 g + 1 teaspoon dried parsley + 1 teaspoon thyme + ยผ teaspoon red pepper flakes + ยฝ teaspoon fine sea salt + ยผ teaspoon ground black pepper
    • Add diced peppers, finely chopped green onions, and peas.

    • Bake quiche: Pour the mixture into a large, greased baking dish. Bake for about 35 minutes until set and golden.

    Notes

    1. Baking dish: You will need a large baking dish to bake the quiche in 35 minutes. I use a ceramic quiche dish with a diameter of 12 inches (30 cm). If your baking dish is smaller, you must increase the baking time. Check that the mixture is set in the middle.
    2. Cottage cheese: I use 4% cottage cheese most of the time, but 2% will work, too.
    3. Cheese: I recommend using freshly grated cheese; pre-grated cheese contains additives that prevent it from melting nicely. I usually use Cheddar or Gouda, but feta, Parmesan, or another flavorful cheese is fine. I donโ€™t recommend mozzarella; it is too bland.
    4. Fresh herbs are a great alternative. You can use parsley, dill, thyme, oregano, basil, marjoram, chives, etc. I often use fresh herbs in summer.
    5. Other vegetables: You can use veggies that cook quickly, such as zucchini, tomatoes (seeds removed), mushrooms, spinach, canned corn, etc.
    6. Additions: Small amounts (about ยฝ cups) of cooked sausage, leftover chicken, turkey, or other leftover meats, ham, cooked bacon, salami, cooked shrimp, or canned tuna.
