Recipe ingredients
- Overripe bananas: They should have plenty of brown spots. The riper the fruit, the sweeter the bread. However, they should not be so soft that they already feel like liquid inside; at that stage, they are beyond saving.
- Chocolate chips (milk, dark, or white chocolate chips) or chopped chocolate. If you need to chop the chocolate, do it in the Thermomix before you start with the recipe (See Tips).
- Walnuts or any other nuts you like. Try pecan nuts, macadamia nuts, hazelnuts, or almonds. Next, make Banana Bread with Pecans!
- Other ingredients: Butter, brown sugar (white is fine, too), vanilla extract, all-purpose flour, eggs, baking soda, a little apple cider vinegar, cinnamon, and a pinch of salt. You can dust the bread with some icing sugar before serving.
How do you make banana bread in Thermomix?
Step #1: Mix soft butter and sugar for 10 seconds on speed 4. Add banana chunks and stir for 2 seconds on speed 4.
Step #2: Add all the other ingredients and mix for 13 seconds on speed 4. Scrape.
Step #3: Pour the batter into a buttered loaf pan. Sprinkle with some extra chocolate chips if desired.
Step #4: Bake in the preheated oven for 50 minutes or until a toothpick inserted in the middle comes out clean.
Tips
The quantities are given in grams because that is how the Thermomix measures. I added the cup measurements should you want to stir the batter without using this kitchen gadget. However, I always recommend using a digital kitchen scale (the Amazon affiliate link opens in a new tab) when baking.
Process chocolate in the Thermomix: Break the chocolate into chunks and process it for 3-4 seconds on speed 6-7. Don’t let it become a powder; the pieces should be about as large as chocolate chips.
Topping: You can sprinkle icing sugar on top before serving, but it's optional. Alternatively, cover the bread with a simple icing sugar glaze or cream cheese frosting. Make the glaze we used for the White Chocolate and Walnut Cookies.
Recipe FAQs
Overripe bananas meant for baking should have lots of brown spots. However, they should not smell, feel like they’re liquid inside, start oozing liquid, or have a molded tip. If they show any of these signs, discard them; they are beyond saving.
At room temperature in an airtight container for 2-3 days.
Refrigerate in an airtight container for 4-5 days.
Freeze the whole loaf or individual slices wrapped in plastic wrap and then aluminum foil for up to 3 months.

Banana Bread in Thermomix
Equipment

- Loaf pan 9 inches/ 22 cm (measured at the bottom)
Ingredients
- 100 g unsalted butter soft, scant ½ cup
- 120 g brown sugar or white, ½ cup
- 3 medium bananas overripe
- 175 g all-purpose flour 1 â…“ cups
- 1 teaspoon baking soda
- ½ teaspoon cinnamon
- 1 pinch of salt
- 2 large eggs
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 40 g walnuts ¼ cup, Note 2
- 45 g chocolate chips ¼ cup + more for sprinkling over the bread, Note 3
Instructions
- Preheat the oven to 180°C/ 360°F. Butter the tin.
- Mix soft butter and sugar for 10 seconds on speed 4. Break each banana into several smaller pieces, add them to the bowl, and mix for 2 seconds on speed 4. Scrape the sides of the bowl with the spatula.
- Add the remaining ingredients and mix for 13 seconds on speed 4. Use the spatula to scrape down the sides of the bowl and mix the remaining clumps into the batter.
- Bake banana bread: Pour the batter into the prepared tin and sprinkle it with more chocolate chips if desired. Bake it for 50 minutes or until a toothpick inserted in the middle of the bread comes out clean.
- Cool: Leave the cake in the pan for 20 minutes, then transfer it to a wire rack to cool completely. Dust with icing sugar before serving (optional), or cover the bread with a simple icing sugar glaze or with cream cheese frosting.
Notes
- Measurements: The recipe uses grams since that's how Thermomix measures ingredients. I included cup measurements if you prefer not to use the machine. But for baking, I always recommend using a digital scale (the Amazon affiliate link opens in a new tab).
