Equipment

  • Thermomix
  • Loaf pan 9 inches/ 22 cm (measured at the bottom)

Ingredients

  • 100 g unsalted butter soft, scant ½ cup
  • 120 g brown sugar or white, ½ cup
  • 3 medium bananas overripe
  • 175 g all-purpose flour 1 ⅓ cups
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 pinch of salt
  • 2 large eggs
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 40 g walnuts ¼ cup, Note 2
  • 45 g chocolate chips ¼ cup + more for sprinkling over the bread, Note 3

Instructions

  • Preheat the oven to 180°C/ 360°F. Butter the tin.
  • Mix soft butter and sugar for 10 seconds on speed 4. Break each banana into several smaller pieces, add them to the bowl, and mix for 2 seconds on speed 4. Scrape the sides of the bowl with the spatula.
  • Add the remaining ingredients and mix for 13 seconds on speed 4. Use the spatula to scrape down the sides of the bowl and mix the remaining clumps into the batter.
  • Bake banana bread: Pour the batter into the prepared tin and sprinkle it with more chocolate chips if desired. Bake it for 50 minutes or until a toothpick inserted in the middle of the bread comes out clean.
  • Cool: Leave the cake in the pan for 20 minutes, then transfer it to a wire rack to cool completely. Dust with icing sugar before serving (optional), or cover the bread with a simple icing sugar glaze or with cream cheese frosting.

Notes

  1. Measurements: The recipe uses grams since that's how Thermomix measures ingredients. I included cup measurements if you prefer not to use the machine. But for baking, I always recommend using a digital scale (the Amazon affiliate link opens in a new tab).
  2. Nuts: You can leave the walnuts out of the recipe or replace them with pecans, macadamia, hazelnuts, or almonds. You can also use dried fruit or berries instead.
  3. Process chocolate in the Thermomix: Break it into chunks and process for 3-4 seconds at speed 6-7. Ensure it doesn't turn into powder; you want the pieces to be like chocolate chips.
