    Apple Cherry Crumble

    This apple cherry crumble is a simple fruit dessert with a crisp topping. Great way to use fresh or frozen cherries and apples any time of year.

    To make this simple apple cherry crumble, you don't need fancy ingredients, and you don't need to be precise. It's the kind of recipe you can make without thinking too much. The fruit softens nicely in the oven, and the topping is crisp and golden. Serve the crumble warm or cold, on its own or with something creamy.

    Recipe ingredients

    Cherries: You can use sweet cherries, fresh or frozen. If using sour cherries, you might need more sugar.

    Apples: Pick apples that hold their shape in the oven - soft apples turn mushy. Try an Apple and Rhubarb Cake, too.

    You will need equal amounts of apples and cherries, and you will mix them with a bit of sugar, lemon juice, and a few tablespoons of water or apple juice.

    Variations

    You can use other fruit - plums, berries, or rhubarb, all work. If you don't have cherries, just use all apples.

    Nuts: Add some chopped nuts to the topping or a bit of cinnamon if you like.

    Sweetness: It's easy to adjust the sugar, too, depending on how sweet your fruit is. You can also mix the fruit with other sweeteners of choice, like honey, maple syrup, xylitol, or erythritol.

    How to make cherry and apple crumble?

    Step 1: Pit the cherries. Peel and quarter the apples, then cut each quarter into 2-3 slices and halve those slices.

    Step 2: Mix the fruit with sugar and lemon juice. Let it sit while you prepare the crumble.

    Step 3: Combine flour, soft butter, sugar, and cinnamon. Mix using the kneading attachments of your mixer until you get a crumbly dough.

    Step 4: Place the fruit mixture in a baking dish. Sprinkle the crumble on top and bake until golden brown.

    Storage

    Refrigerate leftover apple and cherry crumble for up to 3-4 days. Cover the dish or transfer the crumble to a container.

    Reheat in the oven if you want the topping crisp again, or use the microwave if you're in a hurry - the topping will soften a bit, but it still tastes fine.

    Can I use frozen cherries for the crumble?

    Yes. No need to thaw them first. Bake the crumble a little longer, about 10-15 minutes extra, to make sure the fruit is fully cooked. Keep an eye on the crumbles, they should not get too brown. If necessary, cover the dish loosely with a piece of foil.

    Can I make the crumble vegan?

    Yes. Replace the butter with vegan butter or margarine. That's the only switch you need to make - the rest is already plant-based.

    How to serve the crumble?

    You can eat it warm or cold. A scoop of vanilla ice cream is the obvious choice, but whipped cream or even plain yogurt also works. If you don't want anything on the side, just eat it as it is - still good.

    Ingredients 
     

    For the fruit:

    • 2 cups cherries about 10.5 oz Notes 3, 4
    • 2 medium apples about 10.5 oz
    • 2 tablespoons granulated sugar Note 5
    • juice of ยฝ lemon
    • 3-4 tablespoons apple juice or water

    For the crumble:

    • 1 ยผ cups all-purpose flour
    • ยฝ cup butter soft
    • ยฝ cup granulated sugar
    • 1 teaspoon cinnamon

    Instructions

    • Preheat the oven to 375ยฐF/180ยฐC.
    • Prepare the fruit: Pit the cherries. Peel the apples and cut them into quarters. Then slice each quarter into 2 to 3 thinner slices and cut those in half.

    • Make crumble filling: Mix the cherries and apples with sugar, lemon juice, and a few tablespoons of water or apple juice. Let it sit while you prepare the rest.
      2 tablespoons granulated sugar + juice of ยฝ lemon + 3-4 tablespoons apple juice
    • Make the crumble: Combine flour, butter, sugar, and cinnamon. Mix using the kneading attachments of your mixer until you get a crumbly dough.
      1 ยผ cups all-purpose flour + ยฝ cup butter soft + ยฝ cup granulated sugar + 1 teaspoon cinnamon
    • Assemble the dish: Place the fruit mixture in a baking dish. Sprinkle the crumble on top.
    • Bake the apple and cherry crumble for 25-30 minutes or until golden brown.

    Notes

    1. To make the crumble by hand, use your fingers to rub the soft butter into the flour, sugar, and cinnamon until the mixture looks like coarse crumbs. Don't overwork it - small lumps are fine.
    2. To make the crumble in a food processor, combine the flour, sugar, cinnamon, and cold butter cut into cubes. Pulse a few times until the mixture resembles coarse crumbs. Be careful not to over-process - it should still have some small lumps for a nice texture.
    3. Cherries: You can make the crumble with sour cherries, too. In that case, add more sugar - about 4 tablespoons - to balance the tartness.
    4. Frozen cherries work well as well; no need to thaw them first. Just bake the crumble a little longer, about 10-15 minutes extra, to make sure the fruit is fully cooked. Keep an eye on the crumbles, they should not get too brown. If necessary, cover the dish loosely with a piece of foil.
