How to make honey-roasted pumpkin?

Step #1: Halve the pumpkin, remove the seeds, and cut into ยฝ-inch (1.5 cm) wedges.

Step #2: Whisk oil, honey, and spices in a small bowl (or directly in the large bowl before adding the pumpkin).

Step #3: Toss the pumpkin slices with the honey mixture (hands work best).

Step #4: Arrange the slices on the lined baking sheet.

Step #5: Roast for 25-30 minutes until soft and slightly caramelized around the edges.

Step #6: Serve the honey-roasted pumpkin as it is or sprinkled with feta, roasted pepitas, and drizzled with a little bit more honey.

Cutting the pumpkin safely: Use a sharp knife and a stable cutting board. Cut off the top and bottom so it sits flat, then carefully halve it. Scoop out the seeds and strings with a spoon, and slice into even wedges about ยฝ inch thick. Taking your time and working on a steady surface makes it much easier and safer.

Instructions
- Preheat the oven: Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- Slice the pumpkin: If using a pumpkin other than Hokkaido (Red Kuri), peel it first. Halve the pumpkin, scoop out the seeds and stringy parts with a spoon, then cut it into ยฝ-inch (1.5 cm) thick wedges.2 lbs pumpkin
- Prepare the honey mixture: Whisk together olive oil, honey, garlic, and all the spices. - Pumpkin type: I usually use Hokkaido pumpkin (Red Kuri squash) because it's flavorful and doesn't need peeling. You can also use butternut squash or any other flavorful variety, just make sure to peel it.
- Spices: Feel free to adapt the spice mix to your taste. If you don't have all these spices, try paprika, cinnamon, or even a store-bought spice blend. A simple mix of salt, pepper, and paprika also works.
