    This honey-roasted pumpkin is the easiest and most delicious way to cook pumpkin. It's sweet, savory, and perfectly soft inside with crisp edges - a quick roasted pumpkin recipe you can serve as a side dish, mix into salads, or add to your fall meals.

    In just about 45 minutes, this honey-spiced baked pumpkin is perfect for everything from a simple weeknight dinner to a festive holiday table.

    Pumpkin: Hokkaido pumpkin (red Kuri) is easiest since it doesn't need peeling, but you can also use butternut, sugar pumpkin, or any other flavorful squash. Just peel varieties with a tough skin before roasting. Make this Creamy Pumpkin and Sweet Potato, too.

    Spices: I love the combination I use, but the honey-roasted pumpkin recipe is very flexible. Swap turmeric, cumin, and coriander for paprika, cinnamon, or dried herbs - whatever you like. Honey pairs well with both sweet and savory spices.

    Alternative spice mixtures

    • 3-4 TBS olive oil + 2 tablespoons honey + 1 teaspoon dried thyme or oregano + ยฝ ts dried rosemary + 2 grated garlic cloves + salt and pepper to taste
    • 3-4 TBS olive oil + 2 tablespoons honey + 1 teaspoon smoked paprika + ยฝ teaspoon ground cumin + ยผ teaspoon chili flakes + 1 grated garlic clove + salt and pepper to taste.
    • 3-4 TBS olive oil + 2 tablespoons honey + 1 teaspoon grated orange zest + ยฝ teaspoon ground cinnamon + ยผ teaspoon ground nutmeg + 1 grated garlic clove + salt and pepper to taste.

    How to make honey-roasted pumpkin?

    Step #1: Halve the pumpkin, remove the seeds, and cut into ยฝ-inch (1.5 cm) wedges.

    Step #2: Whisk oil, honey, and spices in a small bowl (or directly in the large bowl before adding the pumpkin).

    Step #3: Toss the pumpkin slices with the honey mixture (hands work best).

    Step #5: Roast for 25-30 minutes until soft and slightly caramelized around the edges.

    Step #6: Serve the honey-roasted pumpkin as it is or sprinkled with feta, roasted pepitas, and drizzled with a little bit more honey.

    Tip

    Cutting the pumpkin safely: Use a sharp knife and a stable cutting board. Cut off the top and bottom so it sits flat, then carefully halve it. Scoop out the seeds and strings with a spoon, and slice into even wedges about ยฝ inch thick. Taking your time and working on a steady surface makes it much easier and safer.

    Can I roast smaller or larger pumpkin pieces?

    Yes. Just note that smaller pieces (cubes) will cook faster and may crisp more, while larger wedges (quarters) take a bit longer to become tender.

    What's the best way to get pumpkin with caramelized edges?

    Make sure the pumpkin wedges aren't crowded on the baking sheet, and roast at a high temperature (400ยฐF/200ยฐC).

    Can I make this roasted pumpkin recipe vegan?

    Definitely. Just swap the honey for maple syrup or agave nectar.

    Store and reheat

    Ingredients 
     

    • 2 lbs pumpkin Note 1
    • 2 tablespoons honey
    • 3 tablespoons olive oil
    • 2 garlic cloves
    • ยฝ teaspoon turmeric Notes 2,3
    • ยฝ teaspoon coriander
    • 1 teaspoon cumin
    • ยผ teaspoon red pepper flakes or cayenne pepper to taste
    • ยฝ teaspoon fine sea salt
    • ยผ teaspoon ground black pepper

    Instructions

    • Preheat the oven: Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
    • Slice the pumpkin: If using a pumpkin other than Hokkaido (Red Kuri), peel it first. Halve the pumpkin, scoop out the seeds and stringy parts with a spoon, then cut it into ยฝ-inch (1.5 cm) thick wedges.

    • Prepare the honey mixture: Whisk together olive oil, honey, garlic, and all the spices. You can also do this directly in the large bowl where you will place the wedges later.
      2 tablespoons honey + 3 tablespoons olive oil + 2 garlic cloves + ยฝ teaspoon turmeric + ยฝ teaspoon coriander + 1 teaspoon cumin + ยผ teaspoon red pepper flakes + ยฝ teaspoon fine sea salt + ยผ teaspoon ground black pepper
    • Coat pumpkin slices: Add the pumpkin wedges to the bowl and toss well until all pieces are evenly coated with the honey-spice mixture (using your hands works best).
    • Roast honey pumpkin: Arrange the wedges in a single layer on the prepared baking sheet. Roast for 25-30 minutes, or until the pumpkin is tender and slightly caramelized around the edges.
    • Serve hot with a dip and salad, or at room temperature. You can drizzle the pumpkin wedges with feta, roasted pumpkin seeds or pepitas, and a little more honey if you like. You can also add the roasted pumpkin to salads, risotto, pasta, or grain bowls.

    Notes

    1. Pumpkin type: I usually use Hokkaido pumpkin (Red Kuri squash) because it's flavorful and doesn't need peeling. You can also use butternut squash or any other flavorful variety, just make sure to peel it.
    2. Spices: Feel free to adapt the spice mix to your taste. If you don't have all these spices, try paprika, cinnamon, or even a store-bought spice blend. A simple mix of salt, pepper, and paprika also works.
    3. More seasoning ideas:ย
