This simple apple and cucumber salad recipe makes a great summer side dish. Itโs perfect for making a few hours in advance and serving at garden parties, potlucks, or picnics. You can mix chopped apples and cucumbers with our tasty honey vinaigrette or go for a creamy yogurt dressing. Either way, this cucumber apple salad is sure to please.

Recipe ingredients
- Fresh cucumbers: You will need one long English cucumber or several small Persian cucumbers (depending on their size, three or four).
- Persian cucumbers are my favorite; they have fewer seeds, less water, and a crisp texture.ย
- Apples: Sweet and tart, crunchy apples like Pink Lady, Honeycrisp, or Granny Smith.
- Vinaigrette: Olive oil, apple cider vinegar, honey, and fresh herbs like mint or parsley. You can replace the apple cider vinegar with white wine vinegar or balsamic.ย
- Creamy dressing: Greek yogurt, lemon juice, fresh dill, and a pinch of sugar. You can replace the lemon juice with maple syrup.

Great additions
Cheese: Good-quality crumbled feta cheese or even finely diced Gouda or Cheddar pieces.
Nuts: Pine nuts or walnuts are a perfect addition, but pecans, hazelnuts, almonds, or sunflower seeds are great, too. For extra flavor, roast the nuts or seeds. Only add them to the apple cucumber salad just before serving.

Step #1:ย Chop the cucumber and the apples into small bite-size pieces and place them in a large bowl.ย

How to store the salad?
Refrigerate it in an airtight container for 1-2 days. While it is best served on the day you make it, the leftovers will still taste delicious.

Apple and Cucumber Salad
Equipment

Ingredients
- 1 long English cucumber Note 1
- 2 medium apples Note 2
Vinaigrette:
- 2 tablespoons extra-virgin olive oil
- 1 ยฝ tablespoons apple cider vinegar
- 1 teaspoon honey
- fine sea salt and ground black pepper to taste
- 2 leaves of fresh mint or 1 sprig of parsley
Yogurt dressing:
- ยฝ cup Greek yogurt 125 g, Note 3
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon lemon juice or balsamic vinegar, more to taste
- 1 pinch of sugar
- 1 tablespoon dill chopped, fresh or frozen, not dried
- fine sea salt and ground black pepper to taste
Instructions
- Chop the apples and the cucumber into cubes (you can chop them as finely or roughly as you please). Place them in a bowl.1 long English cucumber + 2 medium apples
- Vinaigrette: Whisk the ingredients in a small bowl, then toss them with the salad.2 tablespoons extra-virgin olive oil + 1 ยฝ tablespoons apple cider vinegar + 1 teaspoon honey + fine sea salt and ground black pepper
- Yogurt dressing: Mix the ingredients in a small bowl, then toss them with the salad.ยฝ cup Greek yogurt / 125 g + 1 tablespoon extra-virgin olive oil + 1 tablespoon lemon juice + 1 pinch of sugar + fine sea salt and ground black pepper
- Add chopped herbs and toss gently to combine.2 leaves of fresh mint/parsley OR 1 tablespoon dill
- Adjust the taste with salt and pepper and maybe more vinegar/lemon juice or honey/sugar if necessary.
Notes
- Cucumbers: You can also use several small Persian cucumbers. Depending on their size, you will need three or four.
- Apples: Choose sweet, tangy, crisp apples like Pink Lady, Honeycrisp, or Granny Smith.
- Yogurt: I usually use low-fat Greek yogurt, which is about 2% fat. Full fat is excellent, but I would not use non-fat.
