Apple and Cucumber Salad

Try this simple recipe for apple and cucumber salad. You can choose your dressing: vinaigrette or yogurt dressing!

Ingredients

  • 1 long English cucumber Note 1
  • 2 medium apples Note 2

Vinaigrette:

  • 2 tablespoons extra-virgin olive oil
  • 1 ½ tablespoons apple cider vinegar
  • 1 teaspoon honey
  • fine sea salt and ground black pepper to taste
  • 2 leaves of fresh mint or 1 sprig of parsley

Yogurt dressing:

  • ½ cup Greek yogurt 125 g, Note 3
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice or balsamic vinegar, more to taste
  • 1 pinch of sugar
  • 1 tablespoon dill chopped, fresh or frozen, not dried
  • fine sea salt and ground black pepper to taste

Instructions

  • Chop the apples and the cucumber into cubes (you can chop them as finely or roughly as you please). Place them in a bowl.
    1 long English cucumber + 2 medium apples
  • Vinaigrette: Whisk the ingredients in a small bowl, then toss them with the salad.
    2 tablespoons extra-virgin olive oil + 1 ½ tablespoons apple cider vinegar + 1 teaspoon honey + fine sea salt and ground black pepper
  • Yogurt dressing: Mix the ingredients in a small bowl, then toss them with the salad.
    ½ cup Greek yogurt / 125 g + 1 tablespoon extra-virgin olive oil + 1 tablespoon lemon juice + 1 pinch of sugar + fine sea salt and ground black pepper
  • Add chopped herbs and toss gently to combine.
    2 leaves of fresh mint/parsley OR 1 tablespoon dill
  • Adjust the taste with salt and pepper and maybe more vinegar/lemon juice or honey/sugar if necessary.

Notes

  1. Cucumbers: You can also use several small Persian cucumbers. Depending on their size, you will need three or four.
  2. Apples: Choose sweet, tangy, crisp apples like Pink Lady, Honeycrisp, or Granny Smith.
  3. Yogurt: I usually use low-fat Greek yogurt, which is about 2% fat. Full fat is excellent, but I would not use non-fat.
