    Feta and Spinach Rolls

    These easy feta and spinach rolls are the perfect snack or party food - crispy on the outside, soft and flavorful on the inside. Ready in no time and loved by everyone!

    These spinach and feta rolls are so good, I keep making them! Whether I'm having guests over, taking them to a party, or just having a cozy TV night with my family, they're always a hit. Everyone loves how tender and tasty they are, plus they're quick, easy, and affordable.

    Recipe ingredients

    Pizza dough: I use ready-bought dough. Use one sheet of refrigerated rectangular pizza dough, like Pillsbury Classic Pizza Crust. Gently roll it out a little to make it slightly thinner and larger - just enough to give you more surface for the filling.

    Cream cheese: Preferably full-fat, but a bit lower in fat is ok, too. The lower-fat Neufchรขtel-style cream cheese is about 23% fat, and it works, too. Try the Cream Cheese Stuffed Peppers next.

    Feta: Use a good-quality block of feta and crumble it yourself. It tastes fresher and creamier than pre-crumbled feta and makes a big difference in flavor. Check out the Roast Pumpkin and Feta Pizza, too.

    Spinach: You will need a good handful of baby spinach. If you have more spinach, make sure you try the Spinach Gnocchi.

    How to make feta and spinach rolls?

    Step #1: Gently roll out the dough a little to make it slightly thinner and larger, just enough to give you more surface for the filling; donโ€™t overdo it.

    Step #2: Spread the cream cheese evenly on the dough, leaving about 1 cm (ยฝ inch) clear around the edges. Sprinkle it with the seasoning, and add the chopped green onions.

    Step #3: Cover the dough with the washed and well-dried spinach.

    Step #4: Crumble the feta evenly on top.

    Step #5: Roll the dough up tightly from one long side into a log.

    Step #6: Use a sharp knife to cut the roll into even pieces - about 8 - 9 pieces. Place them on the baking sheet.

    I had more rolls because I made a double batch and baked them on two baking sheets.

    Step #7: Mix the egg and the milk and use the mixture to brush the rolls all over.

    Step #8: Bake them in the preheated oven for 16-18 minutes or until golden brown.

    Can I use puff pastry to make the rolls?

    Yes! Thaw one sheet of ready-rolled frozen puff pastry and gently roll it out a little thinner on a floured surface. Cover the dough with the ingredients as instructed before.

    Roll the dough tightly from one long side into a log, cut it into pieces, and place them on a parchment-lined baking sheet. Bake at 425ยฐF (220ยฐC) for 15โ€“20 minutes until golden and puffed.

    Serve and store

    The spinach and feta rolls are delicious hot, warm, or at room temperature. You can make them several hours in advance, let them cool, and serve later without reheating.

    Store the leftovers in an airtight container for up to 2 days. For longer storage, refrigerate them for up to 4 days or freeze for up to 2 months.

    To reheat, warm them in the oven at 350ยฐF (180ยฐC) for about 7-10 minutes until heated through and crisp again.

    Ingredients 
     

    • 1 rectangular sheet of pizza dough roughly 9 ร— 13 inches (23 ร— 33 cm), Note 1
    • 1 ยฝ cups baby spinach loosely packed, about 1.4 oz/ 40 g
    • โ…” cup cream cheese softened for easy spreading
    • ยฝ teaspoon garlic powder Note 2
    • a good pinch of salt
    • a few grindings of ground black pepper
    • 2 green onions finely sliced
    • 1 cup feta crumbled, 5.5 oz/ 150 g, Note 3
    • 1 small egg
    • 1 tablespoon milk

    Instructions

    • Preheat the oven to 425ยฐF/ 220ยฐC. Line the baking sheet with parchment paper.
    • Dough: Gently roll out the dough a little to make it slightly thinner and larger, just enough to give you more surface for the filling; donโ€™t overdo it.

    • Spinach: Wash it and drain it in a colander. Place it on a clean kitchen towel and dry it well.

    • Spread the cream cheese evenly on the dough, leaving about 1 cm (ยฝ inch) clear around the edges. Sprinkle it with the seasoning, and add the finely sliced green onions.

    • Fill the roll: Spread the baby spinach evenly over the cream cheese layer, then sprinkle the crumbled feta on top.

    • Roll the dough up tightly, starting from the shorter side closest to you, to form a log. Cut the log into 8 - 9 even pieces (about 1.3 inches/ 3.3 cm thick). Place the pieces on the prepared baking sheet.
    • Egg wash: Whisk the egg and the milk in a small bowl. Brush the rolls all over with this mixture.

    • Bake the rolls in the preheated oven for 17-18 minutes or until golden brown. Let the rolls cool for about 10 minutes before serving to avoid burning your lips.

    Notes

    1. Dough: If using ready-rolled frozen puff pastry, let it thaw until pliable. Roll it out slightly thinner, spread the filling evenly but not too thick, then roll up and bake at 425ยฐF (220ยฐC) for 15โ€“20 minutes until golden and puffed. Puff pastry gives a lighter, flakier texture than pizza dough.
    2. Seasoning: Use about 2 cloves of freshly grated garlic instead of garlic powder. You can also add chili flakes, dried oregano, Italian herbs, or other seasonings you prefer.
    3. Feta: Use good-quality feta from a block, not the pre-crumbled kind.
