Equipment

  • Large Dutch oven or another large heavy-bottomed pan

Ingredients

  • 10 oz hot dogs 300 g, Note 1
  • 1 large bell pepper red or yellow
  • 1 tablespoon olive oil
  • 12.5 oz short pasta 350 g, Note 2
  • 1 cup frozen peas 150 g
  • 1 cup heavy cream 230 ml
  • 2 ½ cups chicken stock 600 ml
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fine sea salt
  • ½ teaspoon ground black pepper

Instructions

  • Chop: Slice the hot dogs and dice the bell pepper. Keep them separated.
    10 oz hot dogs / 300 g + 1 large bell pepper
  • Sear: Heat the oil, add the sausage slices, and cook them until golden, stirring a few times in between; this should take 2-3 minutes.
    1 tablespoon olive oil + 12.5 oz short pasta / 350 g + 1 cup frozen peas / 150 g + 1 cup heavy cream / 230 ml + 2 ½ cups chicken stock / 600 ml + 2 ½ cups chicken stock + 1 teaspoon garlic powder + ½ teaspoon red pepper flakes + 1 teaspoon fine sea salt + ½ teaspoon ground black pepper
  • Add all the remaining ingredients to the pot and stir well. The pasta should be barely covered with liquid, so the amount of chicken stock you need depends a bit on the size of your pot.
  • Cook: Bring to a boil, reduce the heat to medium-low, and place the lid on top of the pot, leaving a crack open. Simmer for 12-15 minutes, occasionally stirring, until the pasta is al dente and the dish is creamy. Adjust the taste with salt and pepper.
  • Tip: If the hot dog pasta sauce is too thin, remove the lid completely during the last 2-3 minutes of cooking to let the liquid reduce a bit more. If the dish seems too dry before the cooking is done, add a little more stock.

Notes

  1. Hot dogs are also known as frankfurters or wieners. Pork or chicken hot dogs are both excellent.
  2. Short pasta like fusilli, penne, macaroni, ziti, etc.
