Equipment

  • Round baking dish about 11 inches/ 28 cm Note 1
  • Large bowl
  • Small bowl

Ingredients

Crust:

  • 13 oz spaghetti Note 2
  • cup sour cream
  • 2 large eggs lightly beaten
  • 1 mozzarella ball grated
  • ½ cup Parmesan I prefer freshly grated
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground black pepper

Topping:

  • 1 ¼ cups marinara sauce Note 3
  • 3 tablespoons tomato paste
  • 2 garlic cloves grated
  • 1 teaspoon oregano
  • ¼ teaspoon red pepper flakes more to taste
  • ½ teaspoon fine sea salt
  • ½ teaspoon ground black pepper
  • 1 cup grated cheese Cheddar or Gouda, Note 4
  • 16 small salami slices or as many as you need to cover the pizza, Note 5
  • some basil leaves to garnish, optional

Instructions

Make the crust:

  • Preheat the oven to 400°F/ 200°C. Lightly grease the baking dish.
  • Cook pasta: Bring a large pot of water to a rolling boil. Add salt generously. Break the spaghetti in half and cook it according to the package instructions. Drain well, and place in a large bowl.
    13 oz spaghetti
  • Mix crust ingredients: Mix spaghetti with sour cream, lightly beaten eggs, grated mozzarella and Parmesan, salt, and pepper.
⅓ cup sour cream + 2 large eggs + 1 mozzarella ball + ½ cup Parmesan + ½ teaspoon fine sea salt + ½ teaspoon ground black pepper
  • Bake spaghetti crust: Press the mixture into the lightly greased baking dish. Bake for 8 to 10 minutes until the crust is firm and lightly golden.

Top the pizza:

  • Sauce: In a small bowl, combine the marinara, tomato paste, grated garlic, oregano, red pepper flakes, salt, and pepper. Spread the sauce evenly over the spaghetti crust.
1 ¼ cups marinara sauce + 3 tablespoons tomato paste + 2 garlic cloves + 1 teaspoon oregano + ¼ teaspoon red pepper flakes + ½ teaspoon fine sea salt + ½ teaspoon ground black pepper
  • Top pizza: Sprinkle the grated cheese on top, then arrange the salami slices (or your preferred toppings) over the cheese.
1 cup grated cheese + 16 small salami slices
  • Bake spaghetti pizza for about 20 minutes, or until the cheese is melted and golden. Rest for about 5 minutes before slicing. Garnish with basil if desired. Serve immediately.

Notes

  1. Baking dish: I baked my spaghetti pizza in a ceramic quiche dish, but you can also use a round pie dish, a small casserole dish, or even a nonstick or cast-iron skillet.
  2. Pasta: I usually go with spaghetti, but other long pasta like linguine, fettuccine, or bucatini works just as well.
  3. Sauce: I used marinara this time, but I often use a classic pizza sauce or tomato sauce with added seasoning. If all you have are regular canned tomatoes, if fine; just mix them with the tomato paste, 2 cloves of grated garlic, 1 teaspoon of oregano, red pepper flakes, salt, and pepper to taste.
  4. Cheese: Gouda or Cheddar are great, but any good-melting cheese you like will work perfectly.
  5. Toppings: Instead of salami, try pepperoni, chopped bacon or pancetta, ham, cooked sausage, or leftover chicken. For veggies, bell peppers, mushrooms, olives, corn, or anything you love on pizza works perfectly.
