Equipment

  • Citrus juicer
  • Bowl
  • Popsicle molds Note 1

Ingredients

  • 2 cups orange juice freshly squeezed, Notes 2, 3
  • cups buttermilk or yogurt, Note 4
  • ½ teaspoon vanilla extract
  • 4-5 tablespoons honey more or less to taste

Instructions

  • Squeeze the oranges and pour the juice into a bowl.
    2 cups orange juice
  • Mix: Add the buttermilk (or yogurt) and vanilla extract. Stir in honey, starting with 3–4 tablespoons, then adjust to taste.
    1½ cups buttermilk + ½ teaspoon vanilla extract + 4-5 tablespoons honey
  • Freeze popsicles: Pour the mixture into popsicle molds and insert sticks. Freeze for 4–6 hours or until solid.
  • To unmold: Run the molds under warm water for a few seconds, then gently remove the popsicles (Note 5).

Notes

  1. Popsicle molds: Silicone molds are great because they’re flexible and make it easy to remove the popsicles, while plastic molds work perfectly too.
  2. How many oranges? I needed 4, but it depends on how large and juicy they are. Buy one more than you think you might need, just to make sure you have enough juice.
  3. Variations: Swap oranges for lemon or lime - just check sweetness and adjust if needed.
  4. Dairy: Use orange yogurt for a sweeter, creamier version. You can also use plain yogurt or full-fat Greek yogurt, sour cream, or quark.
  5. Storage: Keep the popsicles in their molds in the freezer and remove them only when you’re ready to eat. They can stay frozen for several weeks without noticeable changes.
