Easy Mandarin Muffins

  • 1 can mandarin oranges 11 oz/ 316 g can, Note 1
  • 1 ⅔ cups all-purpose flour 200 g, Note 2
  • ¾ cup granulated sugar
  • 3 ½ teaspoons baking powder
  • 4 large eggs
  • cup neutral-tasting oil 145 ml
  • ¼ cup whole milk 60 ml
  • 1 teaspoon vanilla extract
  • 1 teaspoon confectioner sugar for dusting

Instructions

  • Preheat the oven to 350°F/180°C and line the muffin tin with the paper liners.
  • Drain the mandarins in a sieve and set them aside.

  • Combine batter ingredients: In a bowl, combine flour, sugar, baking powder, eggs, oil, milk, and vanilla extract. Mix well for 2-3 minutes. Fold in the drained mandarin segments.

  • Bake: Evenly spoon the batter into each muffin tin cup. Bake for 18-20 minutes until a toothpick inserted in the middle of a muffin comes out clean or barely moist. Don’t overbake!
  • Cool the muffins: Rest the mandarin muffins in the tin for 10 minutes, then transfer them to wire racks to cool completely. Dust them with confectioner sugar before serving.

Notes

  1. Canned mandarins: You will need an 11 oz/316 g can of mandarin oranges preserved in light syrup. You will have about 6 oz/ 170 g of fruit when drained. You can use the same amount (6 oz) of other canned or fresh fruit or berries.
  2. Measurements: I recommend using a digital kitchen scale to weigh the flour (the Amazon affiliate link opens in a new tab). A scale ensures more accurate measurements and simplifies the process. Simply place your bowl on the scale and add all the ingredients directly.
