Learn how to make golden, crunchy air fryer zucchini fries in less than 30 minutes! Perfect as a snack or side, with simple ingredients and easy layering.
Prep the zucchini: Cut the zucchini into sticks 1½ inches (about 4 cm) and pat them dry.1 lb zucchini
Prepare breading: On a large plate, mix flour with salt, pepper, thyme, garlic powder, and paprika. Whisk eggs in a bowl. On another plate, combine breadcrumbs with Parmesan, salt, and pepper.¼ cup all-purpose flour + ½ teaspoon fine sea salt + ¼ teaspoon black ground pepper + ½ teaspoon dried thyme + ¾ teaspoon garlic powder + ½ teaspoon sweet paprika powder2 eggs½ cup dried breadcrumbs + 2 tablespoons Parmesan + fine sea salt and ground black pepper
Bread the zucchini: Dredge zucchini sticks in the flour mixture, shaking off excess. Dip into beaten eggs. Coat evenly with breadcrumb mixture, pressing lightly to adhere.
Assemble: Preheat air fryer to 400 °F (200°C) for 3 minutes. Place a layer of breaded zucchini in the basket (it’s hot!) and spray lightly with oil. Place the second layer of zucchini in the opposite direction of the first, leaving space between sticks. This method allows you to cook all the zucchini in one batch. Spray again.cooking spray oil
Air fry zucchini fries for 5 minutes.
Flip zucchini: Carefully remove the first layer using tongs and place the fries on a large plate. Gently flip the zucchini remaining in the basket to the other side and spray lightly with oil. Return the sticks from the plate to the basket, arranging them in the opposite direction again, making sure both sides are evenly exposed. Spray lightly.
Continue cooking zucchini for another 5–6 minutes until golden and crispy.
Serve immediately with your favorite dip, like chili sauce, garlic sour cream, or homemade mayonnaise.
