This recipe is very versatile, simple and delicious – you can use any type of chicken you like (even leftover roast chicken!) and you can add other ingredients like mushrooms, broccoli, carrots, etc.

Deep frying or Shallow frying?

Deep-frying is when food is cooked at high temperatures in hot oil.  Shallow frying is cooking food at lower temperatures in less oil.  Both cooking methods work!

Ingredients:

Chicken: – Chicken thighs – Fine sea salt or Kosher – Ground black pepper Shallow fried chicken version: – Sesame oil – Cornstarch – Vegetable oil

Ingredients:

Sweet and sour sauce: – Chicken stock – Brown sugar – Ketchup – Rice vinegar – Pineapple juice – Tomato paste – Soy sauce – Sesame oil – Cornstarch – Water

Vegetables: – Red bell peppers – Green bell peppers – Onions – Garlic cloves – Pineapple pieces – Vegetable oil Garnish: – Sesame seeds – Green onions

Preparation:

Vegetables: Chop the peppers and onions and set them aside in a bowl. Chop the pineapple into smaller pieces and chop the garlic finely. Set them aside.

Sauce: Mix chicken stock, brown sugar, ketchup, rice vinegar, pineapple juice, sesame oil, tomato sauce, and soy sauce in a small saucepan.

Chicken: Cut the thighs into bite-size pieces. Place the pieces into a bowl. Season them with salt and pepper.

Mix the pieces with sesame oil, salt, pepper, and only ¼ cup of cornstarch.

Heat oil in a large saucepan. Fry the pieces in two batches until golden and cooked through. Stir often. Check if done. Transfer to a plate lined with paper towels.

Vegetables

Heat one tablespoon of vegetable oil. Stir fry the peppers and the onions. Add the pineapple and the garlic and stir fry.

Cook the sauce:

Add the sweet and sour sauce and bring to a boil. Thicken sauce: Mix the cornstarch with the cold water. Whisk the mixture into the sauce and stir well until  thickened.

Serve this Sweet Sour Chicken - Hong Kong Style

Add the cooked chicken to the pan and stir to coat with the sauce. Sprinkle the dish with sesame seeds and green onion rings and serve immediately.
