This recipe is very versatile, simple and delicious – you can use any type of chicken you like (even leftover roast chicken!) and you can add other ingredients like mushrooms, broccoli, carrots, etc.
Deep-frying is when food is cooked at high temperatures in hot oil.
Shallow frying is cooking food at lower temperatures in less oil.
Both cooking methods work!
Vegetables: Chop the peppers and onions and set them aside in a bowl.
Chop the pineapple into smaller pieces and chop the garlic finely. Set them aside.
Heat oil in a large saucepan.
Fry the pieces in two batches until golden and cooked through. Stir often. Check if done. Transfer to a plate lined with paper towels.
Add the sweet and sour sauce and bring to a boil.
Thicken sauce: Mix the cornstarch with the cold water. Whisk the mixture into the sauce and stir well until thickened.
